The Rice Stuff

Think of Italian food and you'll probably think first of pasta and pizza - few people realise how important rice is as a staple food too. There are at least 12 different varieties grown in Italy, the most famous being Arborio and Carnaroli. Open your eyes to classic dishes like Venetian Risi e Bisi (rice and peas), baby calamari stuffed with Vialone Nano rice, provolone rice cakes, and sausage and red wine risotto.
